Ingredients:
BiGG Coconut Satay
1 red capsicum - diced
1 Lime
4 Shallots - diced
100g green beans - chopped
1 Bunch Basil - chopped
600g Chicken thigh mince
4 garlic cloves
knob of ginger
For the sauce:
2 tsp corn flour (Make a slurry)
150ml water
2 tsp sugar
2 tsp oyster sauce
2 tsp dark soy
Method:
The first step in this recipe is to sauté the diced red capsicum, shallots, and chopped green beans in a pan until they are tender and soft. This should take a few minutes on medium heat. Once they are cooked, remove them from the pan and set them aside.
In the same pan, add the chicken thigh mince and sauté it until it's browned, which will give it a nice, crispy texture. After the mince is browned, add the minced garlic and ginger to the pan and cook for an additional minute, stirring occasionally to ensure everything is evenly cooked.
Next, add the cooked vegetables back into the pan with the chicken mince and pour in the sauce mixture, which is made by combining corn flour, water, sugar, oyster sauce, and dark soy. Cook for an additional minute, stirring constantly, until the sauce has thickened and fully covers the chicken and vegetables.
Finally, top everything with a generous sprinkle of BiGG Coconut Satay seasoning. This seasoning will give your dish a unique and exotic flavor that will elevate the taste of your Thai-style chicken satay to a whole new level. Enjoy!
