BiGG Coconut Satay Seasoning
250g scotch fillet: A tender and juicy cut of beef that is perfect for grilling. Marinade:
2 garlic cloves: Adds a pungent and aromatic flavour to the marinade. ½ tsp grated ginger: Adds a spicy and warming flavour to the marinade. ¼ tsp cumin powder: Adds a warm and earthy flavour to the marinade. ¼ tsp turmeric powder: Adds a bright yellow colour and slightly bitter flavour to the marinade. ¼ tsp coriander powder: Adds a fresh and citrusy flavour to the marinade. 1 tsp fish sauce: Adds a salty and savoury flavour to the marinade. ½ tsp lemongrass paste: Adds a bright and citrusy flavour to the marinade. 10ml cooking oil: Helps to bind the marinade ingredients together.
Soak bamboo skewers in water for 15 minutes. This will prevent them from burning on the grill. Blend all of the marinade ingredients together in a blender until smooth. Cut the scotch fillet into long strips and marinate in the mixture for at least an hour. Thread the marinated beef onto the soaked bamboo skewers. Grill the beef satay on high heat for 6-8 minutes, until it is lightly charred. Allow the beef to rest for 2-3 minutes before serving. Plate the satay skewers and sprinkle a generous amount of BiGG Coconut Satay Seasoning on top.
